Tacos al Pastor

Mexico City street food at its finest — smoky marinated pork with sweet pineapple, onion, and cilantro in a warm corn tortilla.
Ingredients
- •800g pork shoulder, thinly sliced
- •200g pineapple, cut into chunks
- •3 chipotle peppers in adobo
- •4 guajillo chillies, soaked in hot water
- •1 tbsp white vinegar
- •1 tsp cumin
- •1 tsp dried oregano
- •4 garlic cloves
- •White onion, diced
- •Fresh cilantro
- •Lime wedges
- •Corn tortillas
- •Salt to taste

Blend chipotle peppers, soaked guajillo chillies, vinegar, cumin, oregano, garlic, and salt into a smooth marinade.

Coat pork slices in the marinade and refrigerate at least 4 hours, overnight is ideal.

Cook pork in a very hot pan or grill in batches, getting a nice char on the edges.

In the last minute, add pineapple chunks and let them caramelise slightly.

Warm corn tortillas directly over a gas flame or in a dry pan.

Assemble tacos: pork, pineapple, diced onion, cilantro. Squeeze lime generously over the top.
